Campus Juice Meeting

Campus Juice is a student organization at the University of Florida. This organization was created to promote a healthy lifestyle for UF students through volunteering and social activities such as juicing fruits and vegetables, potluck dinners, nature hikes and yoga.

 At their meeting Monday night, the president discussed different ways to make your life healthier and happier. She talked about maintaining a healthy diet and being active, not only physically, but mentally as well.

After the meeting, I had the chance to talk to one of it's members, Nikki McNeeley, who explained that her favorite part about this organization is when they discuss juicing fruits and vegetables.

One Pan Healthy Meals

As a college student, I know how exhausting it can be to come home after a long day on campus and still have to cook yourself dinner. The only thing more exhausting than that is knowing I still have to wash all of my dirty dishes after I eat dinner.

So I decided to research some recipes that are made using only one pan. For those of you who are as lazy as me, I know you will appreciate this recipe.

One Pan Recipe:

         Roasted Shrimp and Asparagus

INGREDIENTS


  • 1 pound raw shrimp (I like 21-25 count size)
  • 1 pound asparagus
  • 3 tablespoon olive oil
  • Parmesan cheese for topping (about 1 ounce)
  • zest of one lemon
  • kosher salt
  • pepper
  • red pepper flakes



  • INSTRUCTIONS


    1. Preheat oven to 425 degrees
    2. Remove woody ends of asparagus by bending each stalk until the end snaps off.
    3. Arrange asparagus on a baking sheet, drizzle olive oil (1-2 tablespoons), season with salt, pepper and a pinch of red pepper flakes.
    4. Roast for 10-15 minutes.
    5. Meanwhile, toss the shrimp with 1 tablespoon of olive oil, lemon zest, salt, pepper and red pepper flakes. Allow to marinade while asparagus is roasting.
    6. After asparagus is cooked but not quite done (10-15 minutes usually), carefully add the shrimp to the pan, arranging around the asparagus.
    7. Roast for about 5 more minutes, until shrimp are pink and cooked through.
    8. Remove from oven and top with freshly grated parmesan.

    Emily Wilson, a sophomore at Santa Fe college finds herself eating out a lot due to getting out of work really late at night. They only time she has time to eat healthy is for breakfast and lunch.

    Dorm Room Cooking!

    For those of us in college who still live in a dorm room, we know how hard it is to cook. With the limited stovetop being shared with 9 other rooms on the floor, it can be challenging to remain healthy and cook meals at home.

    Active Streets Gainesville Event

    Active Streets Alliance organized the Active Streets Gainesville event on February 26, 2017 in Downtown Gainesville. This was a free community event that individuals, businesses and organizations participated in to promote living a healthy, active lifestyle.

    Chefami.com was one of the local businesses that attended. This company provides students with a great way to eat healthy when they live a very busy lifestyle.






    This event also had individuals selling books on vegetarianism.


    Biogera was also one of the companies that was present. They provide food that is sustainable and pesticide free.

    Healthy Crock-Pot Dinners

    Crock-Pot dinners are great for busy college students, who spend all day on campus in class and at the library. Preparing your dinner in the morning, letting it cook all day, and having dinner basically made for you when you get home is perfect for a college students lifestyle. While these meals are easy, there are also a lot of Crock-Pot recipes that are healthy for you as well!

    Here is one of my favorites:

    Crock-Pot Skinny Lemon Chicken

    Ingredients


  • 3 tablespoons coconut oil
  • 4 chicken breasts, cubed
  • 2 cloves garlic, finely chopped
  • 1 teaspoon sea salt
  • 2 cups vegetable broth
  • 3 lemons, juiced and zested
  • 1 tablespoon lite soy sauce
  • 1 tablespoon cornstarch
  • 4 tablespoons honey
  • 1/2 teaspoon poppy seeds
  • 1/2 teaspoon sesame seeds
  • 1/4 cup green onions, diced


  • Directions

    Melt coconut oil in a large skillet over high heat. Add chicken and brown quickly-you don't need to cook each piece through, just add a little color to the outside. 
    Place in a crockpot. Sprinkle with chopped garlic, salt, and drizzle 1 1/4 cups of vegetable broth over the chicken. Cover and cook on low for 4-6 hours, or until very tender. 

    30-40 minutes before serving, whisk together remaining vegetable broth, lemon juice and zest, soy sauce, cornstarch, and honey. Pour this mixture into the crockpot, stir to coat. Turn crockpot to high and cook for 30 minutes, or until the sauce thickens.
