Healthy Dessert Recipes

Who doesn't have a sweet tooth? While all my other blog posts focused on salty, savory foods, I thought it would be a fun idea to give you all some healthy dessert recipes!

Healthy Peanut Butter Banana Cookies

Ingredients:

  • 1 banana
  • 2 tablespoons penut butter
  • 1/2 teaspoon vanilla
  • 1/3 cup coconut flour 
  • 1/2 teaspoon truvia
Instructions:
  1. Preheat oven to 350 degrees
  2. Mash banana, and thoroughly mix in peanut butter and vanilla.
  3. Add coconut flour and Truvia.
  4. Mix well.
  5. Separate into walnut-sized balls. 
  6. Place on cookie sheet and flatten with a fork in the crisscross peanut butter cookie shape. 
  7. Place in the oven and bake for 10-15 minutes until cookies begin to brown slightly.
  8. Remove from oven and let cool. 
Angel Food Cupcakes

Ingredients:
  • 1 box of Angel Food Cake Mix
  • Water
  • Cool Whip Free
  • Fresh Strawberries
  • Cupcake Liners
Instructions:
  1. Preheat oven to 350 degrees.
  2. Prepare Angel Food according to the box directions.
  3. Spoon the batter into the cupcake liners out 3/4 full.
  4. Bake for 8 minutes until the top is slightly colored.
  5. Allow to cool completely.
  6. Add 2 tablespoons of Cool Whip Free to each cupcake.
  7. Add 2 pieces of strawberries.
These cupcakes are only 60 calories!

I have always loved reading Teen Vogue's articles, whether they discussed health, beauty, relationship advice, you name it, they had advice on everything. So when I was reading through Teen Vogue, I was happy to find an article giving advice about how to eat healthy in college!

Healthy Breakfast Recipes

If you are anything like me, then breakfast is a huge part of your day and your favorite meal. Pancakes, french toast, eggs, waffles, you name it, I love it all. So trying to find healthy alternatives to my love of breakfast foods was very hard. I did find a couple recipes that are very healthy and absolutely amazing though!

3 Ingredient Pancakes:

Ingredients:

  • Banana
  • 2 eggs 
  • Ground Cinnamon
Instructions:
  1. Mash banana with a fork.
  2. Whisk together banana, eggs, and cinnamon.
  3. Heat your stove to a low to medium setting.
  4. Spray your pan with cooking spray.
  5. Pour your mixture in like normal pancakes!

Banana and Chocolate Chip Oatmeal Muffins

Ingredients:


  • 3 cups rolled oats or old fashioned oats
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 large eggs
  • ¼ cup pure maple syrup
  • 1 cup mashed banana, 2 bananas
  • 2 teaspoons pure vanilla extract
  • 1 cup 1% milk
  • ¼ cup melted coconut oil
  • 1 cup mini chocolate chips
  • Cooking spray


  • Instructions:


  • Preheat oven to 350.
  • In a medium bowl combine the rolled oats, cinnamon, nutmeg, baking powder, and salt. Set aside.
  • Crack the 2 eggs into another medium bowl. Whisk together with the maple syrup, mashed banana, and vanilla extract till the ingredients are combined and smooth.
  • Slowly whisk in the milk and coconut oil.
  • Pour the wet ingredients into the dry ingredients. Stir until all the oats are covered and moistened.
  • Slowly stir in the chocolate chips.
  • Spray a muffin pan with cooking spray then divide the oatmeal mixture among the 12 muffins tins. Press the mixture down with a spoon so all the oats are covered in liquid.
  • Bake for 30 minutes or until the tops are slightly brown.
  • Let cool for 5 minutes. Enjoy with a little pure maple syrup.

    Publix Like You've Never Seen It Before

     Using my iPhone, I downloaded the Google Street View application to take a panorama 360 photo of the produce and vegetable department in the Publix located on SW 34th Street.

    The produce and vegetable departments in any supermarket are great for fresh and inexpensive ingredients for students to make meals with at home.

    Campus Juice Meeting

    Campus Juice is a student organization at the University of Florida. This organization was created to promote a healthy lifestyle for UF students through volunteering and social activities such as juicing fruits and vegetables, potluck dinners, nature hikes and yoga.

     At their meeting Monday night, the president discussed different ways to make your life healthier and happier. She talked about maintaining a healthy diet and being active, not only physically, but mentally as well.

    After the meeting, I had the chance to talk to one of it's members, Nikki McNeeley, who explained that her favorite part about this organization is when they discuss juicing fruits and vegetables.

    One Pan Healthy Meals

    As a college student, I know how exhausting it can be to come home after a long day on campus and still have to cook yourself dinner. The only thing more exhausting than that is knowing I still have to wash all of my dirty dishes after I eat dinner.

    So I decided to research some recipes that are made using only one pan. For those of you who are as lazy as me, I know you will appreciate this recipe.

    One Pan Recipe:

             Roasted Shrimp and Asparagus

    INGREDIENTS


  • 1 pound raw shrimp (I like 21-25 count size)
  • 1 pound asparagus
  • 3 tablespoon olive oil
  • Parmesan cheese for topping (about 1 ounce)
  • zest of one lemon
  • kosher salt
  • pepper
  • red pepper flakes



  • INSTRUCTIONS


    1. Preheat oven to 425 degrees
    2. Remove woody ends of asparagus by bending each stalk until the end snaps off.
    3. Arrange asparagus on a baking sheet, drizzle olive oil (1-2 tablespoons), season with salt, pepper and a pinch of red pepper flakes.
    4. Roast for 10-15 minutes.
    5. Meanwhile, toss the shrimp with 1 tablespoon of olive oil, lemon zest, salt, pepper and red pepper flakes. Allow to marinade while asparagus is roasting.
    6. After asparagus is cooked but not quite done (10-15 minutes usually), carefully add the shrimp to the pan, arranging around the asparagus.
    7. Roast for about 5 more minutes, until shrimp are pink and cooked through.
    8. Remove from oven and top with freshly grated parmesan.

    Emily Wilson, a sophomore at Santa Fe college finds herself eating out a lot due to getting out of work really late at night. They only time she has time to eat healthy is for breakfast and lunch.
